Executive chef, Kei Kojima, is known for using Kamakura vegetables in his dishes. He combines them with the best seafood, Meishan pork from Ibaraki, and milk-fed veal from Hokkaido. He also uses premium ingredients from France, like foie gras, Bresse chicken, and Bretagne lobster to create traditional yet modern cuisine.
